Project Discover Week #15
Project Discover is my weekly series inspired by my 2017 word of the year, discover. Besides looking for a job I am focused on three things:
- Discover(ing) Portland
- Discover(ing) Exercise
- (re)Discover My Blogging Mojo
Instead of recording my failures on discovering Portland, I'm just going to say that the sun is shining and we are getting out of the RV more! The sun came out yesterday and is going to stick around for a week. We have plans to do a little exploring including a trip to Mt. Rainier (I know, I know, it's not technically Portland…) on Monday.

On the exercise front, it rained most of the week so we only got out two days. I had a weird 24-hour flu bug on Wednesday. I spent most of the day achy and shivering in bed, but totally felt fine yesterday. And as soon as the sun came out we walked along the river. We'll get out every day and get some miles in now that we've got a stretch of good weather.
I lost another 2 pounds this week bringing the total to 14.5, just shy of Phase 2 of Atkins which will double my carbs (from 25 per day to 25-50). Mr. Misadventures has been enjoyed being in that phase the past two weeks. I don't think I will double it right away but I can increase my carbs a little bit if I want. I will definitely be doing that when we head to San Francisco for a few days next month!
We were starting to get a little tired of our food so we made some new dishes this week. I did a shrimp, egg whites, and broccoli stir fry with the Miracle Rice and it was great. We also did lamb burgers with cauliflower mash (with butter and parmesan cheese) and a chicken alfredo pasta with Miracle Noodles (it really was like eating the real thing!) along with French green beans. Last night I made some awesome tandoori chicken with zucchini that we grilled on our barbecue while we sat outside since it was so nice. After a week of ahi poke every day in Kauai, it's been two weeks since we returned and we are finally ready to eat sashimi again and we've got salmon and octopus on the menu for dinner.
Atkins has not been bad at all. From time to time I want a bagel or a hand roll, but other than that, it has been rather easy.
On the blog front, I watched to a few webinar replays, updated some old posts, and compiled all my San Francisco posts into a single collection. Until I can do more updates on my job, that's the best way to bring my content together, like I did for Hawaii.
It was fun interacting with some of the authors of my summetime reading picks on social media. Launching a book is hard and these authors really appreciate any support.

It sounds like you are both doing really well with the diet! Your menus definitely sound a lot different than what I usually eat! 😉 I have only eaten octopus once before, but would do it again! Thanks for sharing!

I do not blog but if I did I think I would be doing everything Michelle suggests. She is so smart and knows what she is doing.

Oh yay!! There’s nothing better than to hear of someone succeeding on their diet. It’s so hard to have will power but sounds like u have the right idea switching up the menus
