Project Discover Week #13
Our mission in taking a vacation to Kauai was total relaxation. So I'm afraid there won't be a post on places to see and things to do on this gorgeous island. The places I saw and things I did involved walking 50 feet to the adult pool or 50 feet from the car to the beach. We did do a 1-mile hike to another beach but that is the sum total of exercise for the week.
I stayed off the computer and the iPhone, today is the first day I opened up the blog. I posted a few Instagram photos, nothing too fancy.

I've read two books thus far, starting my third today. First was my gal pal Lindsey‘s new book on the new Paris and the second was a quirky travel blogger memoir recommended by my girl Kristin.
On the diet front, there's no weigh-in today as we don't have a scale. It's pretty easy to be on an Atkins diet in Hawaii. I kid you not since we arrived on Sunday, we have eaten poke for lunch, for dinner, or for lunch and dinner, every single day. We've also had chicken lau lau (steamed chicken in taro leaves), smoked bbq chicken and Kahlua pork. But mostly we've been eating poke. For someone who only got to eat sushi twice last year on the road, I'm in heaven!
My only regret this week on the food front is that I'd love to have SPAM musubi, but a cup of rice is 30-40 carbs, more than the total 25 I'm allotted a day. We didn't do a cheat day, but I am still thinking of grabbing one of those guys for the plane ride home on Sunday. I will let you know if I resist!
Thank you to Lauren and Karissa who filled in the gap this week while I was on vacation with their wonderful guest posts on a day in Denver and getting healthy to get productive. I've got another great guest poster coming up next week.
As for my own guest posting activities, my writing appeared on The Wednesday Edit this week covering the topic of obtaining travel peace of mind. I'll be appearing next week on my blogging pal Natalie's blog while she is on vacation.

I can’t wait to go to Hawaii. My daughter will be moving there (Oahu) in August to go to Grad School for 2 years.

It sounds to me like you had a wonderful time at the beach in Kauai. Hawaii is on my bucket list as I would like to see the black sand beaches and the wonderful scenery. Thank you for sharing your vacation, but what is Poke?
